Ingredients
1¼cups whole wheat flour
1cupold-fashioned rolled oats
1½tspground cinnamon
1tspbaking power
¼tspsalt
1large egg
¼cupunsalted butter, softened and cubed
½cuphoney
½cupunsweetened applesauce
1tspvanilla extract
½chopped apple
½cupchopped pecans, optional
Instructions
Preheat oven to 350 °F. Line two baking sheets with silicone baking mats or parchment paper and set aside.
In a large bowl, mix the flour, oats, cinnamon, baking powder, and salt.
Make a well in the center and add the egg, butter, honey, applesauce, and vanilla. Mix wet ingredients inside the well and then mix into the dry ingredients until just combined.
Fold in the chopped apple and pecans.
Spoon dough onto prepared baking sheets in two rows, 8 cookies per pan.
Bake for 18-22 minutes, until golden brown. Enjoy warm or allow to cool completely.
Store in an air-tight container at room temperature or in the refrigerator.
