  • Parchment paper or silicone backing mats
  • Large mixing bowl

Ingredients

  • cups whole wheat flour
  • 1 cup old-fashioned rolled oats
  • tsp ground cinnamon
  • 1 tsp baking power
  • ¼ tsp salt
  • 1 large egg
  • ¼ cup unsalted butter, softened and cubed
  • ½ cup honey
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • ½ chopped apple
  • ½ cup chopped pecans, optional

Instructions

  • Preheat oven to 350 °F. Line two baking sheets with silicone baking mats or parchment paper and set aside.
  • In a large bowl, mix the flour, oats, cinnamon, baking powder, and salt.
  • Make a well in the center and add the egg, butter, honey, applesauce, and vanilla. Mix wet ingredients inside the well and then mix into the dry ingredients until just combined.
  • Fold in the chopped apple and pecans.
  • Spoon dough onto prepared baking sheets in two rows, 8 cookies per pan.
  • Bake for 18-22 minutes, until golden brown. Enjoy warm or allow to cool completely.
  • Store in an air-tight container at room temperature or in the refrigerator.
