Apricot Turkey Pinwheels

Equipment

  • Large baking sheet
  • Parchment paper
  • Very sharp knife

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • ¼ cup apricot preserves
  • ½ teaspoon ground mustard
  • ½ cup shredded Monterey Jack cheese
  • 4 ounces sliced deli turkey

Instructions

For the pinwheels

  • Preheat oven to 400°F. Line baking sheet with parchment paper.
  • Unfold the pastry. Layer with preserves, mustard, cheese and turkey.
  • Roll up tightly, jelly-roll style. Refrigerate roll for 10 minutes before slicing.
  • Using a very sharp knife, cut into 16 slices.
  • Place cut side down on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown.

Notes

To slice the pinwheels equally, score the top of the roll into 16 pieces before cutting apart. Score at the halfway point, then score each half into halves again, then score each quarter into halves, and finally score each eighth into halves so you have 16 equal pieces.
