Ingredients
8ounces(1/2 pound) ground breakfast sausage
6largeeggs
2tablespoonsmilk or half-and-half
Salt, ground black pepper & dried parsley flakes, to taste
56-inchpita breads (white or whole wheat)
1.5cupssausage gravy (canned or homemade)
1cupshredded cheese (your choice)
Instructions
For the Pizzas
Preheat the oven to 425°F.
In a large skillet, cook the sausage over medium heat, breaking into crumbles, until browned and cooked through. Remove sausage to a plate lined with paper towels. Return skillet to heat.
In a medium bowl, whisk eggs, milk, salt, pepper and parsley flakes. Pour egg mixture in the skillet. Gently scramble eggs, forming large, soft pieces. Do not stir constantly and do not overcook. Remove from heat.
Arrange pita breads on a baking sheet. Divide gravy between pita breads and spread it to the edges.
Top each with cooked sausage, eggs and cheese, dividing evenly.
Bake 5-7 minutes, or until cheese is melted and it begins to brown.
Use a pizza cutter or large knife to cut pizzas into 4 or 6 pieces.
Notes
Mix it up and try bacon or ham in place of the breakfast sausage.Add sautéed veggies (onions, bell peppers, spinach, mushrooms) before the cheese for an exciting spin.Cooking for one? Cook all the sausage and eggs, but only assemble one pizza. Put the remaining ingredients in the refrigerator to use later.
