These simple bar cookies feature a hearty combination of peanut butter and oatmeal. They are topped with butterscotch chips and a sweet peanut butter glaze.
½cupunsalted butter, room temperature (plus more for greasing)
½cupgranulated sugar
½cuppacked brown sugar
¾cupcreamy peanut butter, divided
1largeegg
1teaspoonvanilla extract
1cupall-purpose flour
1teaspoonbaking soda
¼teaspoonsalt
½cupquick-cooking oatmeal
6ouncebutterscotch chips,about one cup
1cuppowdered sugar
4tablespoonwhole milk
Instructions
Preheat oven to 350 °F. Grease 13x9 baking dish with butter and set aside.
Using an electric mixer, cream the butter, sugar, brown sugar, and ½ cup peanut butter in a large bowl. Add the egg and vanilla; mix well.
Sift the flour, baking soda, and salt into the butter/sugar mixture. Add the oatmeal and mix well.
Spread the batter in the prepared baking dish. Sprinkle the butterscotch chips over the batter and bake for 20-25 minutes, until browned around the edges. Remove from oven.
Meanwhile, whisk together the powdered sugar, milk, and remaining ¼ cup peanut butter until smooth. Spread the glaze evenly over warm bars.
Allow to cool completely before cutting into 15 bars.
