Ingredients
1tablespooncanola oil
1large onion, chopped
3cloves garlic, minced
1poundlean ground beef
1(15-ounce) can fire-roasted diced tomatoes
1(15-ounce) can kidney beans, drained and rinsed
1tablespoonchili powder
2teaspoonscumin
1/4teaspooncayenne pepper
3 1/4cupslow-sodium chicken broth
12ouncesorecchiette pasta (or shells)
2cupsshredded cheddar cheese
Chopped chives for garnish, if desired
Instructions
In very large skillet, heat oil over medium heat. Add onion and cook until tender, about 5 minutes.
Add garlic and stir until fragrant, about 1 minute.
Add ground beef and cook until no longer pink, about 5 minutes. Drain excess fat.
Return the pan to heat and add tomatoes, beans, seasonings, chicken broth, and pasta. Bring to a simmer, and cook until pasta is al dente, about 14-15 minutes.
Remove pan from heat and stir in shredded cheddar, until just melted.
