1½cupswater
5tablespoonsbutter,divided
1package(6 ounce) chicken stuffing mix
1mediumonion, diced
1can(10.5 ounce) low-sodium cream of chicken soup
½can(10.5 ounce) low-sodium cream of mushroom soup
8ouncessour cream
1wholecooked rotisserie chicken, skinned, boned and meat shredded ( about 4 cups)
½teaspoonsalt
½teaspoonblack pepper
Instructions
Preheat oven to 375°F. Spray 13x9-inch baking dish with cooking spray.
Bring water and 4 tablespoons butter to a boil in a medium saucepan over medium heat. Add stuffing mix and stir to combine. Remove saucepan from heat, cover, and let sit until water is absorbed, about 5 minutes. Fluff stuffing with a fork.
Meanwhile, melt remaining 1 tablespoon butter in a small skillet over medium heat. Add onions, cook and stir until softened, about 5-10 minutes.
In a medium bowl, mix both condensed soups with sour cream until well combined.
Spread shredded chicken in the bottom of the prepared baking dish. Layer cooked onions over chicken and season with salt and pepper.
Top with soup mixture and spread stuffing evenly over top.
Bake in preheated oven until filling is bubbly and topping is golden brown, about 45-55 minutes.
