Ingredients
Filling:
¼cupgranulated sugar
1tablespooncornstarch
¼teaspoonground cinnamon or nutmeg
5cupspeeled, sliced, fresh peaches ( 5 – 6 large)
Topping:
1/2cupwhite whole wheat flour
1/2cupall-purpose flour
1/2cupgranulated sugar
1teaspoonbaking powder
1teaspoonsalt
1/3cupcold margarine or butter
1large egg, beaten
vanilla ice cream, for serving(optional)
Instructions
Prepare baking dish
Preheat oven to 375°F. Spray with nonstick spray a 11” x 7” x 2” baking dish.
For the filling
In large bowl, whisk sugar, cornstarch and cinnamon or nutmeg.
Add peaches; stir to coat.
Pour peaches and juices into baking dish.
For the Topping
In large bowl, whisk together whole wheat flour, all-purpose flour, sugar, baking powder and salt.
Cut in the margarine or butter until mixture resemble fine crumbs.
Stir in the egg and mix until combined and crumbly.
Sprinkle crumb topping evenly over peaches.
Bake 35 - 40 minutes, or until peaches are bubbling and topping is golden-brown.
