Ingredients
4largeeggs
5tablespoonsmilk,divided
2tablespoonsgranulated sugar
1teaspooncinnamon
1teaspoonvanilla extract
8slicedstore-bought cinnamon bread
½cuppowdered sugar
Instructions
Preheat oven to 350°F. Spray 8 cups of muffin pan generously with nonstick spray or line with muffin liners.
In a large bowl, whisk together the eggs, 4 tablespoons milk, sugar, cinnamon and vanilla.
Cut bread into bite-size cubes. Gently stir bread cubes into the egg mixture and coat all pieces.
Evenly divide the bread and egg mixture into the 8 prepared muffin cups.
Bake for 15-16 minutes or until golden brown. Remove from oven.
Meanwhile, in a small bowl, combine the powdered sugar with up to 1 tablespoon milk to form a smooth glaze. Pour the glaze over muffins and serve immediately.
