Ingredients

  • 1 9-inch frozen pie crust (or, make your own with Mom's Favorite Pie Crust recipe)
  • 1 quart (4 cups) fresh strawberries, stems removed and cut in halves
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup cold water
  • 1 3-ounce package strawberry-flavored gelatin
  • 1 8-ounce container whipped topping, optional

Instructions

For the Pie

  • Prepare and bake the frozen pie shell according to the package directions for a single-crust pie. Make sure to prick the crust with fork tines many times before baking. Let it cool completely.
  • In a 2-quart saucepan, whisk together the sugar and cornstarch, blending the cornstarch in completely. Add water and cook over medium heat, whisking continuously, until mixture thickens.
  • Remove from heat. Add gelatin and whisk until smooth. Let mixture cool to room temperature.
  • Arrange strawberries in the baked pie crust. Pour cooled gelatin mixture evenly over strawberries.
  • Refrigerate until set, about 3 hours. Just before serving, top pie with whipped topping, if desired. Cover and refrigerate any remaining pie.
