1/2cupmayonnaise
2tablespoonshoney mustard
1tablespoonshot honey (adjust based on your preferred spice)
1teaspoonminced garlic
1teaspoon lemon juice

8thick slicesHawaiian bread
16ouncessliced honey ham
12 ouncesMonterrey Jack cheese,sliced
8thinpineapple slices,grilled or fresh
2-4tablespoonsmelted butter
Instructions
Preheat panini maker.
Make aioli by combing mayonnaise, honey mustard, hot honey, minced garlic, lemon juice and salt in a small bowl.
Spread aioli evenly over each slice of bread.
Layer the bottom slices of bread evenly with Monterey jack cheese slices, pineapple slices and ham. Finish with top slices of bread.
Butter each outer side of bread.
Place sandwich on the preheated Panini press. Grill for 3-4 minutes, until the bread is toasted and cheese is melted.
Remove from heat, allow to cool for 1 minute. Slice and serve with additional aioli for dipping, if desired.
Notes
No panini maker? No problem! Grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together.You can pre-grill the pineapple slices before you put them in the panini. This really brings out their sweetness.
