Ingredients

  • 4 thick slices Italian bread

  • 4 ounces fresh mozzarella cheese, thinly sliced
  • 4 ounces pepperoni slices
  • Fresh basil leaves
  • Olive oil spray

Instructions

  • Preheat panini maker.

  • Layer the bottom slices of bread with mozzarella slices, pepperoni slices, and fresh basil leaves. Finish with top slices of bread.
  • Spray the outsides of the sandwich with olive oil spray.
  • Place sandwich on the preheated press. Grill for 3-4 minutes per side, until the bread is toasted and cheese is melted.
  • Remove from heat, allow to cool for 1 minute. Slice and serve with additional pizza sauce for dipping, if desired.

Notes

No panini maker? No problem! Grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together. Or try a bacon press if you have one of those.
