Ingredients
3tbspextra-virgin olive oil
1smallonion, halved and thinly sliced
2mediumpepperoncini pepper, thinly sliced
1clovegarlic, minced
1lbsshaved or very thinly sliced beef
¼cupchopped fresh parsley
¾tspsalt
½tspblack pepper
4whole-wheat pocket pitas
2cupsshredded Italian blend cheese
½cuppickled, sliced banana peppers
Instructions
Preheat the broiler.
Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onion and the pepperoncini peppers. Cook about 5 minutes, stirring occasionally, until slightly softened.
Add the garlic and beef and cook about 3 minutes more, until the beef begins to brown.
Add the parsley, salt, and pepper, and cook 1 more minute.
Meanwhile, line a large baking sheet with aluminum foil.
Arrange the pitas on the prepared baking sheet and sprinkle each with about ¼ cup cheese. Top evenly with the beef mixture and the remaining 1 cup cheese.
Broil the pizzas until the cheese melts, about 2 minutes. Top with pickled banana pepper slices and cut each pizza into quarters. Serve warm.
