Making the Pulled Pork Grilled Cheese
Heat shredded pork and minced garlic in a small saucepan over medium-low heat, just until heated through.
Heat skillet or griddle over medium heat.
To assemble sandwiches, spread outsides of bread with mayonnaise. Layer one slice of bread, one slice of cheese, 4 ounces pork, drizzle 2 tablespoons BBQ sauce, another slice of cheese, and top with remaining slice of bread.
Toast sandwiches in prepared skillet or on griddle until golden brown and cheese is melted, about 2-3 minutes per side.
