Instructions
Place eggs in saucepan large enough to hold them in single layer. Add cold water to cover eggs by 1 inch. Cover with lid. Heat over high heat just to boiling.
Remove pan from burner. Let eggs stand in hot water about 10 minutes.
Transfer eggs to a bowl of ice water. Let eggs cool completely, about 10 minutes.
Peel eggs under cool running water and halve lengthwise. Spoon yolks into a large bowl and set aside. Chop egg whites into small thin strips and set aside.
Add mayonnaise, vinegar, mustard, sugar, salt, pepper and paprika to the bowl with egg yolks and whisk until completely combined with no yolk chunks remaining, about 1 minute. Add reserved egg whites; fold until combined.
Transfer to a serving bowl and garnish with additional black pepper, paprika and chives. Serve with crackers, pretzels or toasted baguette slices.
Notes
For extra flavor add a dash of hot sauce or a tablespoon of sweet pickle relish.
