Cool off this summer with these S’mores Ice Cream Sandwiches! With all the flavors of the classic campfire treat, these frozen goodies are sure to be a hit!

Ingredients
7ouncesmarshmallow fluff (one jar)
1 ½quartsvanilla ice cream, softened
18graham cracker squares (9 full sheets)
1cupmilk chocolate chips
Instructions
Preheat oven to broil.
Spread the marshmallow fluff onto a baking sheet lined with parchment paper.
Broil for 2 minutes or until toasted on top. Watch this carefully so it doesn’t burn. Remove from the oven and let cool for a few minutes on the counter.
Scoop the softened ice cream into a large bowl and add the toasted marshmallow fluff. Stir until combined.
Line an 8x8 inch pan with plastic wrap and arrange 9 graham cracker squares on the bottom.
Pour the ice cream mixture over the graham crackers and place the remaining 9 graham cracker squares on top.
Cover with plastic wrap and freeze 6-8 hours or overnight.
Melt the chocolate chips in a microwave-safe liquid measuring cup; stir until smooth.
Remove from the pan and cut into 18 sandwiches.
Dip each sandwich about ¼ of the way into the chocolate (or drizzle the chocolate on top) and place on a parchment-lined baking sheet.
