Ingredients
½cupgranulated sugar
¼cupwhole wheat flour
¼cupall-purpose flour
½ tspsalt
½tspground cinnamon
1largeegg
½tspvanilla extract
2mediumgranny smith apples, cored, peeled and chopped (about 2 ½ cups)
¾cupchopped pecans
For severing: powdered sugar and cool whip
Instructions
Preheat oven to 350 °F. Spray 9-inch pie plate with nonstick cooking spray and set aside.
In a large bowl, combine the sugar, flours, baking powder, salt, and cinnamon.
In a small bowl, whisk the egg and vanilla. Stir into dry ingredients just until moistened. Fold in apples and pecans.
Transfer to prepared pie plate. Bake for 25-30 minutes or until apples are tender and a toothpick inserted in the center comes out clean.
Sprinkle with powdered sugar, if desired.
Cut into 8 triangles and serve warm with a dollop of cool whip.
