Ingredients

  • 1 1/4 cups whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup zucchini, peeled, de-seeded and shredded
  • ½ cup semisweet chocolate chips

Instructions

Baking the Whole Wheat Double Chocolate Zucchini Bread

  • Preheat oven to 350°F. Spray 8x4 loaf pan and set aside.
  • In a medium bowl, mix flour, cocoa, baking soda, salt, and baking powder.
  • In a large bowl, mix sugar, oil, eggs, vanilla, and zucchini. Add dry ingredients and mix well. Gently fold in chocolate chips.
  • Pour batter into prepared loaf pan. Bake in preheated oven for 65-70 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan on a wire rack for 15 minutes. Remove bread from the pan and cool completely before slicing.
