Ingredients
1 1/4cupswhole wheat flour
¼cupunsweetened cocoa powder
½teaspoonbaking soda
½teaspoonsalt
¼teaspoonbaking powder
1cupgranulated sugar
½cupvegetable oil
2largeeggs
1teaspoonvanilla extract
1cupzucchini, peeled, de-seeded and shredded
½cupsemisweet chocolate chips
Instructions
Preheat oven to 350°F. Spray 8x4 loaf pan and set aside.
In a medium bowl, mix flour, cocoa, baking soda, salt, and baking powder.
In a large bowl, mix sugar, oil, eggs, vanilla, and zucchini. Add dry ingredients and mix well. Gently fold in chocolate chips.
Pour batter into prepared loaf pan. Bake in preheated oven for 65-70 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan on a wire rack for 15 minutes. Remove bread from the pan and cool completely before slicing.
