Lime Poke Cake
Looking for something green for your St. Patrick’s Day dessert? This simple cake uses only a boxed cake mix, lime gelatin and a tub of your favorite whipped topping. Decorate with green sanding sugar for a fun, green dessert!

- Nonstick cooking spray
- Large bowl
- Electric mixer
- Medium bowl

Ingredients
- 1 16.25 oz box white cake mix
- Water, oil and egg whites as directed on your cake mix box
- 1 cup boiling water
- 1 3-ounce box lime-flavored gelatin
- 1 8-ounce container whipped topping
- Green sanding sugar, for garnish
Instructions
For the lime poke cake
- Preheat oven to 350°F. Spray 13x9-inch cake pan with nonstick cooking spray.
- In a large bowl, beat cake mix, water, oil and egg whites with an electric mixer on low speed for 30 seconds. Scrape the sides of the bowl. Then beat on medium speed for 2 minutes. Pour into prepared pan.
- Bake for 23-28 minutes or until toothpick inserted in the center comes out clean. Cool on cooling rack 20 minutes.
- Meanwhile, in a medium bowl, pour boiling water on gelatin; whisk briskly until gelatin is dissolved.
- Poke the cake every inch with the handle of a wooden spoon or the tines of a fork halfway into the cake. Carefully and slowly pour the lime gelatin over the cake. Cool completely in the refrigerator, about 1 hour.
- Spread the whipped topping evenly over the cake. Decorate with green sanding sugar, if desired.
- Cut the cake into 12 generous pieces and enjoy chilled.
Notes
Try adding a drop or two of green food coloring to dye the whipped topping the green color of your choice. Easily decorate the top of the cake with a variety of St. Patrick’s Day goodies.
