  • Large mixing bowl

Ingredients

  • 4 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 1 cup baby spinach, chopped
  • 1 pound ground chicken
  • ½ cup plain breadcrumbs
  • ¼ cup sour cream
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • ½ teaspoon dried paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

Making the Mediterranean Chicken Patties

  • In a large cast-iron skillet, heat 2 tablespoons oil over medium-high heat until sizzling hot. Sauté onions and garlic until tender and browned.
  • Add spinach and sauté for 1 minute more. Remove from heat.
  • In a large mixing bowl, add ground chicken, breadcrumbs, sour cream, dill, lemon juice, all spices, and sautéed mixture. Using your hands, combine mixture thoroughly.
  • Using about 2/3 cup chicken mixture, firmly shape into 8 patties.
  • Add remaining 2 tablespoons oil to cast-iron skillet and heat over medium-high heat for about 2 minutes.
  • Cook patties in hot skillet for 3-5 minutes on each side, or until internal temperature reaches 165o on a food thermometer. Cook in 2 batches if necessary.
  • Serve warm.
