Ingredients
- 4 tablespoons olive oil, divided
- 1 medium onion, diced
- 1 tablespoon minced garlic
- 1 cup baby spinach, chopped
- 1 pound ground chicken
- ½ cup plain breadcrumbs
- ¼ cup sour cream
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- ½ teaspoon dried paprika
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
Making the Mediterranean Chicken Patties
- In a large cast-iron skillet, heat 2 tablespoons oil over medium-high heat until sizzling hot. Sauté onions and garlic until tender and browned.
- Add spinach and sauté for 1 minute more. Remove from heat.
- In a large mixing bowl, add ground chicken, breadcrumbs, sour cream, dill, lemon juice, all spices, and sautéed mixture. Using your hands, combine mixture thoroughly.
- Using about 2/3 cup chicken mixture, firmly shape into 8 patties.
- Add remaining 2 tablespoons oil to cast-iron skillet and heat over medium-high heat for about 2 minutes.
- Cook patties in hot skillet for 3-5 minutes on each side, or until internal temperature reaches 165o on a food thermometer. Cook in 2 batches if necessary.
- Serve warm.
