Ingredients
3tablespoonsunsalted butter
1mediumyellow onion, diced
½teaspoonsalt
½teaspoonblack pepper
3clovesgarlic, finely chopped
1poundfresh broccoli, chopped
1poundorzo
4cupslow-sodium chicken broth
¾cupwhole milk
8ounceblock sharp cheddar cheese, shredded
Instructions
In a large skillet over medium heat, melt butter. Add onion, season with salt, pepper, and garlic. Cook, stirring occasionally, until softened, about 7 minutes.
Add broccoli and cook, stirring, until the florets are crisp and bright green, about 3-5 minutes.
Add orzo, broth, and milk. Gently stir, then spread mixture into an even layer covering the bottom of the pan.
Reduce heat, cover and simmer on low for 5 minutes. Stir and continue cooking until orzo is al dente but cooked through.
Top with shredded cheese. Cover and cook for an additional 1 minute until the cheese is melted.
Gently stir in cheese and serve.

Try adding chicken or another protein to make it a complete meal.
