Apple Cinnamon Peanut Butter Quesadillas

Ingredients
- 1 honey crisp apple, diced
- ¼ teaspoon ground cinnamon
- ¼ cup water
- 2 whole wheat tortillas
- 1 tablespoon butter
- 1 tablespoon peanut butter
- ¼ cup granola
- 1-2 teaspoon honey
Instructions
For the quesadillas
- Heat skillet over medium-high heat.
- Sauté apple, cinnamon and water in skillet until apples are tender and lightly browned.
- While apple is cooking, spread butter over one side of each whole wheat tortilla. On the unbuttered side of one of the tortillas spread peanut butter.
- Once apples are tender, remove from skillet.
- Place tortilla buttered-side down in heated skillet. Sprinkle sautéed apples and granola evenly over tortilla. Drizzle with honey. Place second tortilla over mixture, buttered-side up.
- Cook in skillet until golden brown. Flip to other side and cook until golden brown.
- Remove quesadilla from skillet and cut into six slices.
