Apple Cinnamon Peanut Butter Quesadillas

Ingredients

  • 1 honey crisp apple, diced
  • ¼ teaspoon ground cinnamon
  • ¼ cup water
  • 2 whole wheat tortillas
  • 1 tablespoon butter
  • 1 tablespoon peanut butter
  • ¼ cup granola
  • 1-2 teaspoon honey

Instructions

For the quesadillas

  • Heat skillet over medium-high heat.
  • Sauté apple, cinnamon and water in skillet until apples are tender and lightly browned.
  • While apple is cooking, spread butter over one side of each whole wheat tortilla. On the unbuttered side of one of the tortillas spread peanut butter.
  • Once apples are tender, remove from skillet.
  • Place tortilla buttered-side down in heated skillet. Sprinkle sautéed apples and granola evenly over tortilla. Drizzle with honey. Place second tortilla over mixture, buttered-side up.
  • Cook in skillet until golden brown. Flip to other side and cook until golden brown.
  • Remove quesadilla from skillet and cut into six slices.
