- 2 tablespoons lemon juice
- 2 tablespoons mayonnaise
- ½ tablespoon light brown sugar
- ½ tablespoon vinegar
- ⅛ teaspoon black pepper
- 3 cups coleslaw mix
- 2 green onions, thinly sliced
- 1 (16 ounces) can baked beans
- 3 cups shredded cooked chicken
- ⅔ cup BBQ sauce
- 6 (6-inch) flour tortillas
- 6 ounces shredded Cheddar cheese

Preheat broiler to 450°F.

In a small bowl, combine lemon juice, mayonnaise, brown sugar, vinegar and black pepper. Toss with coleslaw and green onions. Refrigerate until serving.

Heat baked beans in a small saucepan on low heat for about 10 minutes; stir frequently, slightly mashing as you stir.

In a medium saucepan, mix chicken and BBQ sauce; cook on low heat for about 10 minutes, stirring occasionally.

Arrange tortillas on a large baking sheet. Spray with nonstick spray or spray butter. Broil for 2-3 minutes, or until they are golden brown and crisp. Remove from oven, flip over tortillas, spray with butter, and broil on the other side for another 2-3 minutes.

To assemble tostadas, spread beans evenly among the 6 tortillas, top with chicken mixture and cheese. Return to oven and broil tostadas for an additional 1-2 minutes to melt and brown cheese.

Top with prepared coleslaw. Cut as desired and serve immediately.
