For the Parfait:
- One 15 ounce box cornbread, prepared in a square pan (egg, milk and vegetable oil used to prepare mix)
- One 14 or 16 ounce bag coleslaw mix
- ¾ cup coleslaw dressing
- 3 cups BBQ pork or beef
For the parfaits
Prepare the cornbread according to package instructions. Let cool then cut into cubes and set aside.
In a large bowl, combine the coleslaw mix and dressing; set aside.
Place the BBQ pork or beef in a bowl and microwave until hot.
In cups (or bowls), create the parfait by layering with cornbread cubes, BBQ pork or beef and coleslaw.
These make a great picnic meal!
