Ingredient List
For the burritos:
  • 12 ounces cooked beef brisket, sliced
  • 12 large eggs
  • ⅓ cup whole milk
  • Salt and pepper, to taste
  • 6 large (10-inch) flour tortillas
  • 1 ½ cups shredded white Cheddar cheese
For the burritos
  • Cook and slice beef brisket as you choose, use leftover brisket slices, or use store-bought precooked brisket slices.

  • Heat large skillet. Whisk together eggs and milk, season with salt and pepper; pour in skillet. Cook on low heat 5 to 7 minutes or until eggs are done, stirring often.

  • Evenly distribute the cooked eggs, brisket slices and cheese among the 6 flour tortillas.

  • Heat each burrito in the microwave for 30 seconds to melt the cheese, then roll up burrito tightly around filling.

  • Serve warm with hot sauce or your favorite salsa.
