- 12 ounces cooked beef brisket, sliced
- 12 large eggs
- ⅓ cup whole milk
- Salt and pepper, to taste
- 6 large (10-inch) flour tortillas
- 1 ½ cups shredded white Cheddar cheese
Cook and slice beef brisket as you choose, use leftover brisket slices, or use store-bought precooked brisket slices.
Heat large skillet. Whisk together eggs and milk, season with salt and pepper; pour in skillet. Cook on low heat 5 to 7 minutes or until eggs are done, stirring often.
Evenly distribute the cooked eggs, brisket slices and cheese among the 6 flour tortillas.
Heat each burrito in the microwave for 30 seconds to melt the cheese, then roll up burrito tightly around filling.
Serve warm with hot sauce or your favorite salsa.
