Berry Berry Bagels

- Parchment paper
- Medium bowl
- Pastry brush
Ingredients
- 1/2 cup nonfat vanilla Greek yogurt
- 1/2 cup nonfat raspberry Greek yogurt
- 1 1/3 cups self-rising flour
- 1 tablespoon granulated sugar (or no-calorie stevia)
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries
- 1 egg white, beaten
Instructions
- Preheat oven to 350 F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, combine the yogurt, flour, sugar, and vanilla until a soft dough forms.
- Gently fold in blueberries.
- On a lightly floured surface, divide dough into 6 equal pieces. Roll each piece into an 8-inch rope; then pinch the ends together to form a circle. Arrange on prepared baking sheet.
- Gently brush each bagel with egg white. Bake for 20-25 minutes or until golden brown.
- Allow to rest 5-10 minutes before serving.
Notes
You can substitute 1 1/3 cups all-purpose flour, 1 ½ teaspoons baking powder, and ½ teaspoon salt in place of the self-rising flour in this recipe.
