Blueberry Cookies

Ingredients

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • â…› teaspoon salt
  • â…“ cup frozen blueberries
  • â…“ cup unsalted butter, room temperature
  • â…“ cup granulated sugar
  • ½ cup white chocolate chips

Instructions

  • Preheat oven to 400°F. Line a large baking sheet with parchment paper and set aside.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a small microwavable bowl, heat the blueberries at 30-second intervals for 1-2 minutes, stirring after each interval, until berries are soft and liquifying.
  • In large bowl, cream together the butter and sugar with an electric mixer until light and fluffy. Beat in blueberries at high speed, until incorporated.
  • Mix in the dry ingredients. Then fold in white chocolate chips.
  • Flatten the batter into a disk shape in the bottom of the bowl and place in the freezer for 30 minutes.
  • Remove from freezer and cut into 12 pieces. Shape each piece into a ball and place on prepared baking sheet. Bake for 10-13 minutes until slightly golden brown around the edges.
  • Remove from the oven and cool on the baking sheet for 5-10 minutes before removing to a cooling rack to cool completely. Store in an airtight container at room temperature.
