Butterscotch Peanut Butter Bars

These simple bar cookies feature a hearty combination of peanut butter and oatmeal. They are topped with butterscotch chips and a sweet peanut butter glaze.

Ingredients

  • ½ cup unsalted butter, room temperature (plus more for greasing)
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ¾ cup creamy peanut butter, divided
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup quick-cooking oatmeal
  • 6 oz butterscotch chips, about one cup
  • 1 cup powdered sugar
  • 4 tbsp whole milk

Instructions

  • Preheat oven to 350 oF. Grease 13x9 baking dish with butter and set aside.
  • Using an electric mixer, cream the butter, sugar, brown sugar, and ½ cup peanut butter in a large bowl. Add the egg and vanilla; mix well.
  • Sift the flour, baking soda, and salt into the butter/sugar mixture. Add the oatmeal and mix well.
  • Spread the batter in the prepared baking dish. Sprinkle the butterscotch chips over the batter and bake for 20-25 minutes, until browned around the edges. Remove from oven.
  • Meanwhile, whisk together the powdered sugar, milk, and remaining ¼ cup peanut butter until smooth. Spread the glaze evenly over warm bars.
  • Allow to cool completely before cutting into 15 bars.
