Butterscotch Peanut Butter Bars
These simple bar cookies feature a hearty combination of peanut butter and oatmeal. They are topped with butterscotch chips and a sweet peanut butter glaze.

Ingredients
- ½ cup unsalted butter, room temperature (plus more for greasing)
- ½ cup granulated sugar
- ½ cup packed brown sugar
- ¾ cup creamy peanut butter, divided
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup quick-cooking oatmeal
- 6 oz butterscotch chips, about one cup
- 1 cup powdered sugar
- 4 tbsp whole milk
Instructions
- Preheat oven to 350 oF. Grease 13x9 baking dish with butter and set aside.
- Using an electric mixer, cream the butter, sugar, brown sugar, and ½ cup peanut butter in a large bowl. Add the egg and vanilla; mix well.
- Sift the flour, baking soda, and salt into the butter/sugar mixture. Add the oatmeal and mix well.
- Spread the batter in the prepared baking dish. Sprinkle the butterscotch chips over the batter and bake for 20-25 minutes, until browned around the edges. Remove from oven.
- Meanwhile, whisk together the powdered sugar, milk, and remaining ¼ cup peanut butter until smooth. Spread the glaze evenly over warm bars.
- Allow to cool completely before cutting into 15 bars.
