Caprese Chicken Dinner

Ingredients
- 3 tbsp balsamic glaze, plus more for drizzling
- 1 tsp Italian seasoning
- 4 garlic cloves, finely chopped
- ⅓ cup and 3 tbsp olive oil, divided
- 2 tsp lemon juice, divided
- 2 tsp salt, divided
- 4 boneless, skinless chicken cutlets, about 1 ¼ lbs
- 2 medium tomatoes, thickly sliced
- ¾ tsp black pepper, divided
- 8 oz fresh mozzarella, sliced
- 1 (5 oz) container baby arugula
- ⅓ cup shaved parmesan cheese, plus 2 tbsp grated parmesan cheese
- ¼ cup fresh basil leaves
- 8 oz angel hair pasta, cooked and drained
Instructions
- Preheat oven to 375 oF. Line a large sheet pan with foil and set aside.
- In a shallow dish, whisk together 3 tablespoons balsamic glaze, Italian seasoning, garlic, 1/3 cup olive oil, 1 tablespoon lemon juice, and ¾ teaspoon salt. Pour half of the marinade into the second shallow dish.
- Place the chicken in one dish of marinade and place the tomatoes in the other dish of marinade. Toss both to coat and allow to sit for 30 minutes.
- Remove the chicken and tomatoes from the marinade and arrange on the prepared baking sheet. Sprinkle with ½ teaspoon each salt and pepper. Roast in preheated oven for 15-20 minutes, or until the chicken reaches 165o on a meat thermometer.
- Remove the sheet pan from the oven and increase the heat to broil. Top each piece of chicken with 2 slices of mozzarella cheese. Return to the oven and broil until the cheese is melted, 3-4 minutes.
- Meanwhile in a medium bowl, toss the arugula with 2 tablespoons of olive oil, 1 tablespoon lemon juice, and ¼ teaspoon each salt and pepper. Add the shaved parmesan and toss gently.
- Toss the cooked pasta with the remaining 1 tablespoon of olive oil and 2 tablespoons grated parmesan.
- For a complete dinner, drizzle the chicken and tomatoes with balsamic glaze, sprinkle with basil, and serve over the pasta with arugula salad on the side.
