Ingredient List
For the Soup:
  • 1 pound ground beef
  • 1 cup diced onion
  • 1 cup shredded carrots
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 5 cups beef broth
  • 1 teaspoon black pepper
  • 1 ½ cups dry macaroni noodles
  • 1 ½ cups Velveeta cheese
To make the soup
  • In a large pot, brown the ground beef until completely cooked.

  • Add the diced onion, carrots and butter and cook for 3 minutes or until the onions are translucent. 

  • Sprinkle the flour over the beef and vegetables and stir well.

  • Slowly pour in the beef broth and then add the black pepper; stir well and bring to a boil.

  • Add the macaroni noodles and bring the mixture back to a boil.  Boil for 6-8 minutes, or until the macaroni are tender.

  • Turn the burner to low and stir in the cheese until completely melted.
