Cheesy Baked Pasta

This trendy pasta combines a cheesy sauce, tomatoes, whole wheat penne, fresh spinach, basil and parmesan cheese. It is quick and easy to make – sure to be a regular on your weeknight dinner rotation!

Ingredients

  • 2 packages (5.2 ounces each) garlic and herb Boursin cheese
  • 2 pints cherry tomatoes
  • 4 tablespoons olive oil
  • 4 garlic cloves, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 12 ounces whole wheat penne pasta
  • ½ cup pasta water reserved from pasta
  • 1 cup fresh baby spinach, chopped
  • ¼ cup fresh basil
  • ½ cup shredded Parmesan cheese

Instructions

  • Preheat oven to 375°F. Spray 13x9 baking dish.
  • Place the two rounds of Boursin cheese and tomatoes in prepared baking dish. Drizzle with olive oil, garlic, salt, pepper, and red pepper flakes. Bake in preheated oven for 30-35 minutes.
  • Meanwhile, cook the pasta in a large pot of salted water, according to the package directions. Remove ½ cup pasta water and set aside to add to the sauce. Drain the pasta.
  • Remove the roasted tomatoes and cheese from the oven. Toss with the cooked pasta, chopped spinach, and reserved pasta water.
  • Sprinkle with fresh basil and parmesan cheese. Serve immediately.
