- 1 ½ pounds chicken breast
- ¾ cup dill pickle juice
- 1 cup whole wheat flour
- 2 tablespoons powdered sugar
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup low-fat milk
- 1 egg

Cut chicken into 1-inch bite-size pieces. In a large resealable plastic bag, marinate chicken pieces in dill pickle juice for 30 minutes in refrigerator.

In a medium sized bowl, whisk together flour, powdered sugar, paprika, garlic powder, salt and pepper.

In a second bowl, whisk together milk and eggs.

After chicken has marinated for 30 minutes, remove chicken from refrigerator and strain liquid.

Dip chicken into milk and egg mixture and then coat chicken with flour mixture. Shaking off any excess flour.

Place chicken in a single layer in air fryer basket. Spray chicken with cooking spray.

Turn air fryer on to 370°F and set time for 5 minutes.

Flip chicken after 5 minutes and spray chicken with cooking spray. Set air fryer for another 5 minutes.

Remove chicken and serve with your favorite dipping sauce. Serving suggestion: Serve with sweet potato fries and fresh fruit.
