Ingredient List
For the chicken nuggets:
  • 1 ½ pounds chicken breast
  • ¾ cup dill pickle juice
  • 1 cup whole wheat flour
  • 2 tablespoons powdered sugar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup low-fat milk
  • 1 egg
For the Chicken Nuggets
  • Cut chicken into 1-inch bite-size pieces. In a large resealable plastic bag, marinate chicken pieces in dill pickle juice for 30 minutes in refrigerator.

  • In a medium sized bowl, whisk together flour, powdered sugar, paprika, garlic powder, salt and pepper.

  • In a second bowl, whisk together milk and eggs.

  • After chicken has marinated for 30 minutes, remove chicken from refrigerator and strain liquid.

  • Dip chicken into milk and egg mixture and then coat chicken with flour mixture. Shaking off any excess flour.

  • Place chicken in a single layer in air fryer basket. Spray chicken with cooking spray.

  • Turn air fryer on to 370°F and set time for 5 minutes.

  • Flip chicken after 5 minutes and spray chicken with cooking spray. Set air fryer for another 5 minutes.

  • Remove chicken and serve with your favorite dipping sauce. Serving suggestion: Serve with sweet potato fries and fresh fruit.
