Cooking Wheat Berries

Ingredients
- 2 cups wheat berries
- 7 cups cold water
- 1 teaspoon salt
Instructions
For the wheat berries
- Rinse wheat berries well under cool running water.
- Place in a large heavy saucepan. Add water and salt.
- Bring to a boil over high heat, then reduce heat, cover, and simmer gently for 1 hour, stirring occasionally.
- Drain and rinse.
- Use immediately or cover and refrigerate for up to 2 days; freeze for up to 1 month.
- Makes 9 (1/2 cup) servings, 150 calories each.
