Ingredients
- 1 head romaine lettuce, torn into bite size pieces
- 1 red bell pepper, diced
- 1 diced avacado
- 2/3 cup cherry tomatoes
- ½ cup canned black beans, rinsed and drained
- ½ cup frozen corn, thawed
- ¼ cup red onion, diced
- 1 cup jalapeño cheddar croutons
- Optional: shredded cheese, diced chicken, cilantro
Instructions
For the Dressing
- Mix salsa and ranch dressing together in small bowl. Set aside.
For the Salad
- Place lettuce in bowl. Add bell pepper, avocado, cherry tomatoes, black beans, corn, and onion on top of lettuce. Toss to combine.
- Top salad with jalapeño cheddar croutons.
- Drizzle with salad dressing.
