Funnel Cakes

Equipment

  • Large mixing bowl
  • Medium mixing bowl
  • Cast iron skillet or other heavy skillet
  • Funnel
  • Plate lined with paper towels

Ingredients

  • 2 large eggs
  • 1 1/2 cups whole milk
  • 2 tablespoons granulated sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ¼ cup powdered sugar
  • vegetable oil, for frying

Instructions

For the funnel cakes

  • In a large bowl, beat eggs. Add milk and sugarmix well. 
  • In a separate bowl, stir together flour, baking powder, and salt. 
  • Add dry ingredients to wet ingredients and beat until smooth. 
  • In a cast iron or other heavy skillet, heat inch of vegetable oil to 375 degrees. 
  • Pour about 1 cup batter through a funnel, making a circular and crisscross pattern to create a funnel cake. 
  • Fry funnel cake until it reaches a deep golden brown (about 1 minute). Then carefully flip it over and fry on the other side. Remove the funnel cake to drain on a plate lined with paper towels. 
  • Generously sprinkle with powdered sugar and serve hot.
  • Makes about 5 (7-inch) funnel cakes.
