Harvest Snack Mix

This Harvest Snack Mix is a quick and easy recipe using wheat cereal squares, dried fruit, and seeds. It's sweet, salty, crunchy, and full of warm flavors from the cinnamon and brown sugar, with a nice depth from the maple flavoring. It’s packed with energy, and perfect for after school or a fast snack any time!

Ingredients

  • 3 cups wheat cereal squares
  • 2 cups rice cereal squares
  • 1 cup granola
  • 1 cup sweetened dried cranberries
  • ¾ cup pepitas
  • ½ cup chopped pecans
  • ¼ cup butter ,melted
  • ¼ cup brown sugar ,packed
  • 2 tsp ground cinnamon
  • 1 tsp maple extract (or vanilla extract)
  • ¼ tsp salt (optional)

Instructions

  • Heat oven to 250°F.
  • In a large microwave-safe bowl, melt the butter in the microwave for about 30 seconds, or until completely melted. Stir in the maple extract, cinnamon, brown sugar, and salt until combined.
  • Add the remaining ingredients. Spread onto a parchment lined baking sheet.
  • Bake 1 hour, stirring every 15 minutes. Pour out onto parchment paper and let the mix cool at room temperature for about 5–10 minutes.

Microwave method:

  • In a microwave-safe bowl, melt the butter in the microwave for about 30 seconds, or until completely melted. Stir in the maple extract, cinnamon, and brown sugar until combined.
  • Add the wheat cereal squares and rice cereal squares. Stir well to coat the mix evenly.
  • Microwave the coated cereal for about 2 minutes in 30-second intervals, stirring in between each interval. Start by microwaving for 30 seconds, then stir well. Repeat for 2-3 more intervals, checking the mix after each round, until the mix is hot and the sugar has started to dissolve.
  • Stir in granola, dried cranberries, pepitas, and pecans.

  • Pour out onto parchment paper and let the mix cool at room temperature for about 5–10 minutes.

Notes

  • Enjoy right away, or store in an airtight container for up to a week!
  • Try substituting or adding your own favorite ingredients, such as sunflower seeds instead of pepitas, raisins instead of cranberries, or adding almonds or cashews to the mix.
  • To increase nutrition, buy low-sugar dried cranberries and protein granola.
