Equipment

  • large baking sheets

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 ¼ cups salted butter, melted
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 Tablespoon corn syrup
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 3 cups quick oats

Instructions

  • In a large bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt together. Stir in quick oats. Set aside.
  • In a medium bowl, whisk the melted butter, brown sugar, granulated sugar, and corn syrup together until no lumps remain. Whisk in the egg and egg yolk until combined, then whisk in the vanilla extract. The mixture will be thin. Add the dry ingredients and mix together just until combined. Refrigerate for 30 minutes.
  • When ready to bake; preheat oven to 375°F. Line large baking sheets with parchment paper.
  • Using a cookie scoop, scoop the dough; about 2 tablespoons of dough per cookie and place 2 inches apart on the lined baking sheets.
  • Bake for 10–13 minutes or until the cookies are very lightly golden around the edges. Remove from the oven and allow the cookies to cool on the baking sheet for 10 minutes before transferring to a rack to cool completely.
  • Meanwhile in a large bowl using a hand mixer or a stand mixer fitted with a paddle attachment, beat the butter on high speed until creamy, about 1 minute. Add the confectioners’ sugar and salt and beat on medium speed for 1–2 minutes. Fold in the marshmallow cream.
  • When cookies are cool; spread about 1½ Tablespoons of cream filling on the bottoms of half of the cookies. Top with remaining cookies, right side up
