Equipment

  • Small microwaveable bowl
  • 13x18 rimmed sheet pan
  • Meat thermometer
  • Skillet
  • Pizza cutter or sharp knife
  • 13x9 baking pan
  • Nonstick cooking spray

Ingredients

  • 2 pounds extra lean ground beef
  • Salt and pepper (or other seasonings of choice) to taste
  • 8 ounces sliced fresh mushrooms
  • 5 tablespoons unsalted butter, divided
  • 7-9 slices swiss cheese
  • 1 package (12-count) slider buns (Or, try making your own Bread Machine Dinner Rolls)
  • 1 tablespoon Dijon mustard
  • Sesame seeds, optional

Instructions

Cooking

  • Preheat oven to 400°F.
  • Melt 4 tablespoons butter in a small microwaveable bowl. Add the Dijon mustard. Mix well and let cool. While continuing with the recipe, stir every few minutes while it cools to keep mustard and butter incorporated.
  • Spread out the ground beef evenly onto a 13x18 rimmed sheet pan, attempting to cover the entire pan. Sprinkle with salt and pepper, or additional seasonings of choice. Bake for 15-20 minutes, until internal temperature reaches 155°F on a meat thermometer.
  • Meanwhile, melt remaining 1 tablespoon butter in a skillet over medium-high heat. Add sliced mushrooms and sauté until mushrooms are tender. Set aside.
  • When ground beef is cooked, remove from the oven and carefully pour off fat. Using a pizza cutter or sharp knife, cut the cooked beef into 12 even squares.
  • Cut or separate top and bottom of slider buns. Place 12 bottom buns in a lightly greased 13x9 baking pan. Spread half of the cooled butter-mustard mixture on the bottom buns with a small rubber spatula or butter knife.
  • Place one square of beef onto each bottom bun. Top beef with slices of swiss cheese. Place the pan back in the oven for a few minutes just to melt the cheese.
  • Meanwhile, spread the remaining butter-mustard mixture on the 12 top buns.
  • Remove sliders from the oven and divide the cooked mushrooms evenly over the top of the melted cheese. Place the top buns over the mushrooms.
  • If desired, spray the top of the buns with a bit of spray butter or nonstick spray and sprinkle with sesame seeds.
  • Return the completed sliders to the oven for an additional few minutes to toast the top bun. Serve hot.

Notes

The ground beef will shrink while baking. The amount of shrinkage depends on the percentage of fat in the ground beef used. 80-20 or better is recommended. Try adding some sliced onions with the mushrooms for a different flavor.
