Pepperoni Pizza Muffins

Equipment
- Standard 12-cup muffin pan
- Nonstick cooking spray
- Medium mixing bowl
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1 cup whole milk
- 1 large egg
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/2 cup chopped pepperoni
- Marinara sauce for dipping, if desired
Instructions
- Preheat oven to 375 F. Generously grease a 12-cup muffin pan and set aside.
- In a medium bowl, whisk the flour, baking powder, Italian seasoning, and salt.
- Add the milk, egg, mozzarella, and parmesan; stir to combine well but don’t overmix.
- Fold in pepperoni.
- Divide the batter evenly among the cups of the prepared pan.
- Bake for 22-26 minutes, or until golden brown.
- Remove from the oven and let the muffins rest in the pan for 5 minutes.
- Gently remove from the pan. Serve warm with marinara sauce for dipping, if desired.
Notes
Try adding some other favorite pizza toppings, such as bell pepper, onions, mushrooms, or black olives!
