Ingredients
- 1 box (15.25 ounces) vanilla cake mix
- ¼ cup packed brown sugar
- 1¼ cup graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 large eggs
- 16 ounces cream cheese, softened
- 7 ounces marshmallow fluff
- 2 cups powdered sugar
- ½ cup raspberry jam
Instructions
- Preheat the oven to 350°F. Line baking sheets with silicone baking mats and set aside.
- In a medium bowl, whisk to combine the vanilla cake mix, brown sugar, and graham cracker crumbs. Add the melted butter and eggs. Mix using an electric mixer until a thick dough forms.
- Use a ¼ measuring cup to measure out dough and form dough into 3-inch round disks. Place 6 on each prepared baking sheet. Bake for 9-11 minutes or until set. Remove from the oven and allow cookies to cool completely on the baking sheet.
- Once cookies have cooled, combine the softened cream cheese and marshmallow fluff with electric mixer until smooth. Add powdered sugar and mix to create a creamy frosting.
- Add frosting to a piping bag and cut a large triangle from the end. Pipe a generous amount of cheesecake frosting on the top of each cookie, starting on the outside and working toward the middle.
- Add raspberry jam to a second piping bag and cut a small triangle from the end. Drizzle jam over the top of each cookie and serve.
- Store cookies in an airtight container in the refrigerator for up to 4 days.
