Equipment

  • 10-inch nonstick skillet or cast-iron skillet

Ingredients

  • 1 pound ground pork breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon salt
  • 1/2-1 teaspoon freshly ground black pepper

Instructions

  • In a 10-inch skillet over medium-high heat, crumble and cook the sausage. Allow it to brown and crisp a bit for added flavor. Do not drain the grease.
  • Reduce heat to medium and sprinkle flour, salt, and pepper over the sausage. Stir and cook 2 minutes.
  • Slowly add the milk, whisking constantly to prevent flour clumps. Reduce heat to medium-low and allow gravy to simmer, while continuing to whisk frequently. Continue simmering for about 4-5 minutes, or until gravy reaches desired thickness.
  • Serve immediately over hot biscuits.

Notes

Reheat any leftover gravy on the stove over low heat, adding 1-2 tablespoons of milk to reach desired consistency.
