S'mores Cookie Bars

Ingredients

  • 1.5 cups all-purpose flour
  • 2 1/2 cups honey graham cracker crumbs (about 15 full sheets, crushed)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1.5 cups packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 container (7 ounces) marshmallow creme
  • 1 cup mini marshmallows
  • 1 cup semisweet chocolate chips

Instructions

For the S'mores Cookie Bars

  • Preheat oven to 350F. Line the 13x9 baking dish with aluminum foil, leaving a 2-inch overhang on the short sides. Lightly grease the foil with cooking spray.
  • In a medium bowl, whisk together the flour, graham cracker crumbs, baking powder and salt.
  • In a large bowl, using an electric mixer on medium speed, beat the butter and brown sugar about 2 minutes. Beat in eggs and vanilla until well combined.
  • Reduce the mixer speed to low and add the flour mixture, mixing until just combined.
  • Press half of the dough evenly into the bottom of the prepared pan.
  • Dollop the marshmallow creme on top of the cookie base and gently spread into an even layer.
  • Sprinkle the mini marshmallows and chocolate chips on top of the marshmallow creme.
  • Scatter the remaining dough over the top in small clumps, but do not worry about spreading it or completely covering the top.
  • Bake 35-38 minutes, or until golden brown.
  • Cool completely. Remove from the pan with the foil and cut into 24 bars.
