- 2 large eggs, beaten
- 2/3 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 teaspoon grated lemon zest
- ¾ cup granulated sugar
- 2 cups all-purpose flour, plus 1-2 tablespoons
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup confectioners’ sugar
- 1 tablespoon fresh lemon juice
- Decorating sugar

Preheat oven to 400°F. Line baking sheets with parchment paper.

In a large bowl, whisk together eggs, oil, vanilla, lemon zest and sugar until mixture thickens.

In a medium bowl, stir together 2 cups flour, baking powder and salt. Blend flour mixture into egg mixture. If needed, add 1-2 tablespoons flour to make a soft dough.

Use a small scoop to drop cookies about 2” apart on prepared baking sheets. Flatten with greased bottom of glass dipped in sugar. If desired, sprinkle on colored sanding sugar. A variation is to omit the sugar and decorate with Lemon Glaze.

Bake 8 – 10 minutes or until a delicate brown. Remove immediately from baking sheet and cool on rack.

If desired, in a small bowl whisk together the confectioners’ sugar and lemon juice. Drizzle over cookies and sprinkle with decorating sugar.
