Ingredients
- 1 pound ground beef
- 1 package (1 ounce) taco seasoning
- 2 cups uncooked rotini pasta, about 8 ounces
- 3 cups chopped romaine lettuce
- 2 cups halved cherry tomatoes
- 1 cup shredded Cheddar cheese
- ½ cup Catalina salad dressing
- Optional: ½ cup chopped onion and ½ cup chopped green pepper
Instructions
- In a large skillet, cook beef over medium heat, breaking into crumbles; drain fat. Stir in taco seasoning; cool.
- In large pot of water, cook pasta according to the package directions. Drain pasta and rinse in cold water.
- In a large mixing bowl, combine lettuce, tomatoes, cheese, seasoned beef, cooked pasta, and salad dressing. Gently toss to coat. Serve immediately or chill and then serve.
