- 3 tablespoons butter
- ¼ cup flour
- 3 cups turkey drippings (add chicken or turkey broth to make 3 cups if you don’t have enough drippings)
- Salt and pepper, to taste

Melt the butter in a medium saucepan over medium heat.

Add the flour; whisk to combine. Let the mixture cook for about 60 seconds, stirring frequently.

Slowly add the turkey drippings/broth, whisking constantly until it’s all combined.

Let the mixture come to a slow boil. Season to taste.

Serve alongside warm turkey and mashed potatoes, if desired.
