BBQ Chicken Tostadas

  • Nonstick cooking spray or spray butter
  • Small bowl
  • Small saucepan

Ingredients

  • 2 tablespoons lemon juice
  • 2 tablespoons mayonnaise
  • ½ tablespoon light brown sugar
  • ½ tablespoon vinegar
  • teaspoon black pepper
  • 3 cups coleslaw mix
  • 2 green onions, thinly sliced
  • 1 16 oz can baked beans
  • 3 cups shredded cooked chicken
  • cup BBQ sauce
  • 6 (6-inch) flour tortillas
  • 6 ounces shredded Cheddar cheese

Instructions

Making the BBQ Chicken Tostadas

  • Preheat broiler to 450°F.
  • In a small bowl, combine lemon juice, mayonnaise, brown sugar, vinegar and black pepper. Toss with coleslaw and green onions. Refrigerate until serving.
  • Heat baked beans in a small saucepan on low heat for about 10 minutes; stir frequently, slightly mashing as you stir.
  • In a medium saucepan, mix chicken and BBQ sauce; cook on low heat for about 10 minutes, stirring occasionally. 
  • Arrange tortillas on a large baking sheet. Spray with nonstick spray or spray butter. Broil for 2-3 minutes, or until they are golden brown and crisp. Remove from oven, flip over tortillas, spray with butter, and broil on the other side for another 2-3 minutes.
  • To assemble tostadas, spread beans evenly among the 6 tortillas, top with chicken mixture and cheese. Return to oven and broil tostadas for an additional 1-2 minutes to melt and brown cheese.
  • Top with prepared coleslaw. Cut as desired and serve immediately.
