Breakfast Pita Pizzas

Ingredients

  • 8 ounces (1/2 pound) ground breakfast sausage
  • 6 large eggs
  • 2 tablespoons milk or half-and-half
  • Salt, ground black pepper & dried parsley flakes, to taste
  • 5 6-inch pita breads (white or whole wheat)
  • 1.5 cups sausage gravy (canned or homemade)
  • 1 cup shredded cheese (your choice)

Instructions

for the pizzas

  • Preheat the oven to 425°F.
  • In a large skillet, cook the sausage over medium heat, breaking into crumbles, until browned and cooked through. Remove sausage to a plate lined with paper towels. Return skillet to heat.
  • In a medium bowl, whisk eggs, milk, salt, pepper and parsley flakes. Pour egg mixture in the skillet. Gently scramble eggs, forming large, soft pieces. Do not stir constantly and do not overcook. Remove from heat.
  • Arrange pita breads on a baking sheet. Divide gravy between pita breads and spread it to the edges.
  • Top each with cooked sausage, eggs and cheese, dividing evenly.
  • Bake 5-7 minutes, or until cheese is melted and it begins to brown.
  • Use a pizza cutter or large knife to cut pizzas into 4 or 6 pieces.
