Ingredient List
For the Pizza:
  • 5 (6-inch) pita breads (white or whole wheat
  • 8 ounces (1/2 lb) ground breakfast sausage
  • 6 large eggs
  • 2 tablespoons milk or half-and-half
  • Salt, pepper & parsley flakes, to taste
  • 1 ½ cups sausage gravy (canned or homemade)
  • 1 cup shredded cheese (any will do)
  • Preheat the oven to 425°.

  • In a large skillet, cook the sausage over medium heat, breaking into crumbles, until browned and cooked through. Remove sausage to a plate covered with a paper towel to soak up the drippings. Return skillet to heat.

  • In a medium bowl, beat eggs with milk, salt, pepper, and parsley flakes. Pour egg mixture in the skillet. Gently cook eggs, forming large soft curds. Do not stir constantly and do not overcook. Remove from heat.

  • Arrange pita breads on a baking sheet. Divide gravy evenly between pita breads and spread it to the edges.

  • Top each with cooked sausage, eggs, and cheese, dividing evenly.

  • Bake about 5-7 minutes, or until cheese is melted and beginning to brown.

  • Use a pizza cutter or large knife to cut pizzas into 4 or 6 pieces. Enjoy!

Recipe Notes
  • Mix it up and try bacon or ham in place of the breakfast sausage.

  • Cooking for one? Cook all the sausage and eggs, but only assemble one pizza. Put the remaining ingredients in the refrigerator to use later. A hot and fresh breakfast all week in only 10 minutes!

  • Add sautéed veggies (onions, bell peppers, spinach, mushrooms) before the cheese for an exciting spin.
