Ingredient List
For the burritos:
  • 3 cups cooked, shredded chicken
  • 2 tablespoons taco seasoning
  • 1 (14.5 ounce) can black beans, rinsed and drained
  • 1 ½ cups shredded Pepper Jack cheese
  • 2 ounces cream cheese, softened
  • 10 flour tortillas (8-inch/medium)
For the burritos
  • In a medium bowl, gently mix the chicken, taco seasoning, black beans and pepper Jack cheese.

  • Spread a thin layer of cream cheese down the center of each tortilla.

  • Evenly distribute the chicken mixture among the tortillas.

  • Roll tortillas up, burrito style, by folding the ends in and rolling the tortilla over the filling.

  • Wrap each burrito in an aluminum foil sheet. Put all wrapped burritos in a gallon-sized freezer bag. Remove as much air as possible from the bag and seal.

  • To serve, remove aluminum foil from the frozen burrito. Heat unwrapped burrito on a plate in the microwave for about 2 minutes, or until heated through. Garnish or serve with options like with salsa, shredded or chopped lettuce, chopped tomatoes, etc.
