Chicken & Black Bean Burritos

- Medium bowl
- Gallon-sized freezer bag
Ingredients
- 3 cups cooked, shredded chicken
- 2 tablespoons taco seasoning
- 1 14.5 ounce can black beans, rinsed and drained
- 1.5 cups shredded Pepper Jack cheese
- 2 ounces cream cheese, softened
- 10 medium flour tortillas (8-inch/medium)
Instructions
For the burritos
- In a medium bowl, gently mix the chicken, taco seasoning, black beans and pepper Jack cheese.
- Spread a thin layer of cream cheese down the center of each tortilla.
- Evenly distribute the chicken mixture among the tortillas.
- Roll tortillas up, burrito style, by folding the ends in and rolling the tortilla over the filling.
- Wrap each burrito in an aluminum foil sheet. Put all wrapped burritos in a gallon-sized freezer bag. Remove as much air as possible from the bag and seal.
- To serve, remove aluminum foil from the frozen burrito. Heat unwrapped burrito on a plate in the microwave for about 2 minutes, or until heated through. Garnish or serve with options like with salsa, shredded or chopped lettuce, chopped tomatoes, etc.
