Ingredients
- 4 cups cooked shredded chicken
- 8 ounces cream cheese, softened
- 1 1 oz package taco seasoning
- 1 10.5 oz can cream of chicken soup
- 1 15 oz can black beans, drained and rinsed
- 1 10 oz can diced tomatoes and green chiles
- 4 8-inch flour tortillas
- 2 cups shredded Mexican Blend cheese
- 1 cup corn chips, crushed
Instructions
Making the Chicken Taco Casserole
- Preheat oven to 350°F. Spray 13x9 baking dish and set aside.
- Stir together cooked chicken, cream cheese, taco seasoning, cream of chicken soup, black beans, and diced tomatoes and green chiles in a large bowl.
- Arrange casserole in layers, spreading each layer evenly: half the chicken mixture, 2 tortillas, 1 cup shredded cheese, remaining chicken mixture, remaining 2 tortillas, remaining 1 cup shredded cheese, and finally crushed corn chips.
- Bake for 35 minutes, or until cheese is melted and top is beginning to brown.
- Serve warm with your favorite taco toppings, if desired.
